Really Easy Apple Pie

Okay, this isn't exactly a meal, but it's a really good, really easy dessert. Besides, there aren't that many people that don't LOVE apple pie!
I got this from The Veggie Table website.

1 pie crust: butter or vegan
6 granny smith apples (any tart apples will do!), peeled and thinly sliced
1/3 cup sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
3 tbsp flour
2 tsp lemon juice
1/2 cup brown sugar
3 tbsp butter

1. Preheat the oven to 450°. Roll out the pie crust and arrange in the pie plate.

2. Put the sliced apples into a large bowl. Mix the sugar, cinnamon, nutmeg, and 1 T of flour in another bowl, then sprinkle over the apples. Toss until the slices are coated, sprinkle with lemon juice, and toss again. Pour into the pie crust.

3. Blend the brown sugar, butter, and the other 2 T of flour with a fork. Sprinkle over the apples.

4. Bake for 10 minutes, lower heat to 350°, and bake another 45 minutes, until the crust is golden brown.


This is great with whipped cream or vanilla ice cream on top!

This recipe can be made vegan friendly by using vegan pie crust and vegan butter.
